#79: Super Moist Steam Chocolate Blueberries Cake

Saved this recipe in my phone some time ago. Only yesterday, finally made it with a bit modification.

Ingredients A:

  • 180 g Butter
  • 150 g Brown Sugar
  • Nescafe —- I didn’t use because I don’t have, I put Milo
  • 250 g Fresh Milk —- I used Full Cream Milk
  • 70 g Cocoa Powder —- I sieved
  • 1 tsp Vanilla Essence —- I didn’t use because expired

Ingredients B:

  • 100 g Condensed Milk
  • 3 size A Eggs —- My eggs were really small that I used 5, not sure if it’s too many

Ingredients C:

  • 150 g Plain Flour, sieved
  • 1 tsp Double Action Baking Powder, sieved —- I used normal baking powder because I thought I have the double action one
  • 1 tsp Baking Soda

Extra: Blueberries

Method:

  1. Place the Ingredients A into TM bowl to mix. MC/5 min/60°C/Speed 2.
  2. Add in condensed milk and do the setting. 1 min/Speed 3. Then slowly add in the eggs thru the hole in 3 batches.
  3. Add in Ingredients C to mix. Scrap down the mixture and repeat. 10 sec/Speed 3.
  4. Scrap down the mixture using spatula and mix again. 5 sec/Speed 3.5.
  5. Strained the batter into the lined 8 inch round pan and place the pan into the varoma unit (place chopsticks under the pan for hot air ventilation) and cover the top of the pan loosely with a piece of parchment paper. —- I didn’t use the varoma unit, I used the bamboo steamer.
  6. Mix in the blueberries. —- I was a bit greedy that I put the whole pack.
  7. Add in 1500 g water into TM bowl to boil. MC/15 min/V/Speed 2.
  8. Stack the varoma unit on top to steam. 60 min/V/Speed 2. —- Had to steam another 60 min because too wet in the middle.

Best eaten when kept inside fridge overnight. 1 slice at a time.

#76: Tortilla Chips with Stir Fries

Initially wanted to make dumplings but ended up this way, since the original tortilla chips not nice to eat.

Ingredients:

  • Mission’s Original Corn Tortilla Chips
  • Cherry Tomatoes, mixed color
  • White Button Mushrooms
  • Chili Flakes
  • Oil
  • Potatoes
  • Red Apple

Method:

  1. Wash and peel the potatoes, and apple. Julienne them.
  2. Slice the mushrooms into smaller pieces.
  3. Half the tomatoes.
  4. In a pan, heat some oil.
  5. Saute the potatoes until they soften.
  6. Add in mushrooms, and stir fry them.
  7. Then add in the apples, and tomatoes. Stir fry until all mix well.
  8. Then season with the chili flakes.
  9. Serve on tortilla chips.

#57: Chocolate Cheese Pizza

I can eat cheese and chocolate any time of the day.

Ingredients:

  • Dark Cooking Chocolate
  • Pizza Crust
  • Butter
  • Mozzarella Cheese

Method:

  1. Spread some butter on the pizza crust.
  2. Top up with shredded chocolate. As much as you want.
  3. Top up with Mozzarella cheese. You can cut, pull, anyhow up to you. As much as you want.
  4. I cooked mine using induction cooker + pot because my portable oven out-of-order. You can bake according to your preference.

Mine is crispy crust.

#56: Corn Beef, Soy Beans, Fruits, Eggs and Chia Seeds

It would be great if you eat with rice, porridge, noodle, pasta, bread or anything that has a bland taste because it’s salty of you eat it by itself. The saltiness is from the corn beef. Should have filter the oil out.

Ingredients:

  • 4 Chicken Eggs
  • 2 Salted Eggs
  • 1 tablespoon Chia Seeds
  • 1 ripe Mango, cut bite size
  • 1 slice Pineapple, cut bite size
  • 1 pack Frozen Soy Beans
  • 1 can Corn Beef

Sometimes salted eggs are very salty. You don’t have to use the same eggs as me. I used them because I have them at home.

Method:

  1. Wash the eggs clean. Hard boil them in the Thermomix for 14 minutes, Varoma, Speed 1 (Alternative: conventional cooking method).
  2. When the eggs are cooked, transfer into cold water, peeled the shells, and cut into bite sizes.
  3. Open a can of corn beef and pour onto a stainless steel plate. Use a spoon to spread it out.
  4. Open a pack of frozen soy beans and into the steamer tray.
  5. Steam both corn beef and soy beans for 10 minutes, Varoma, Speed 2 in Thermomix (Alternative: conventional cooking method).
  6. When the soy beans are soften, remove the pods.
  7. In a big bowl, mix all the ingredients. And keep inside the fridge until you want to eat.
